Recipe | Cheesy Chicken Pasta

Ingredients (serves 2)
150g fusilli pasta
1 tbsp light olive oil
3 shallots, chopped (or half an onion)
1 red (or yellow) pepper, deseeded and sliced
175g cooked chicken, skinless and boneless (leftover roast chicken would work)
150g sweetcorn (1/2 can), drained
100g garlic and herbs soft cheese
Salt and pepper
Basil, to serve

Step 1. Add the pasta to a pan of lightly salted boiling water. Stir it once and cook, uncovered, for 10-12 minutes.

Step 2. Meanwhile, heat the oil in a frying pan, add the shallots and pepper. Cook for 3-4 minutes until softened.

Step 3. Add the chicken and sweetcorn and cook for 4-5 minutes until the chicken is heated through. Add the garlic and herb soft cheese. Stirring constantly, cook the mixture for 2-3 minutes.

Step 4. Drain the pasta but keep 1tbsp of the cooking water. Return to pan with the water and add the chicken mixture. Toss to mix and season with black pepper. Serve and add a little basil.

This recipe was found in an old Asda magazine but we adapted it slightly to suit us and what we had in the house. I love scouring through magazines and recipe books for new ideas for meals and spending a bit of time in the kitchen making something from scratch, especially if it involves pasta! Although, taking pictures of food in awful lighting is something I do not love!
