RECIPE: Meatballs in a Tomato Sauce

As a part of our DATE CHALLENGE FOR JANUARY we decided that we would steer clear of chicken as our main course as this is always what we make and instead we ended up with these yummy meatballs in a simple tomato sauce. I promised that I would share all the recipes for our three course, home cooked meal so here is the main course just for you!

MEATBALLS

Ingredients (Serves 2)
  • 250g beef mince
  • 20g breadcrumbs
  • 2tbsp grated Parmesan cheese (we couldn't find any at the shop and so substituted it for Red Leicester!)
  • 1/2 onion
  • 1 egg, lightly beaten
  • basil
Step One: Prepare the onion and lightly beat the egg. Grate the cheese.

Step Two: Mix all the ingredients together in one bowl. The best way to really mix everything is to get your hands in there so roll your sleeves up and get messy.

Step Three: Shape the beef mixture into 2.5cm (1inch) balls with damp hands. Lightly oil a baking tray and place the meatballs on said tray.

Step Four: Cook for about 15 minutes or until the meatballs are cooked through in a preheated oven at 220C. We have a fan assisted oven so it was 200C instead! Serve with spaghetti prepared as per packet's instructions and the tomato sauce.

TOMATO SAUCE

Ingredients (Serves 2)
  • 400g tin of chopped tomatoes
  • 1/2 onion, chopped
  • 1 garlic clove, chopped
  • basil 
  • 40ml olive oil
Step One: Place the tomatoes in a large saucepan with the chopped onion and garlic clove. Cover and bring to the boil before reducing the heat and allowing to simmer for 25 minutes.

Step Two: Uncover the pan and continue to simmer for 15-30minutes until the extra liquid has evaporated. You want the sauce to be fairly thick.

Step Three: Puree the sauce in a blend and drain to remove any seeds or skin. This didn't work too well for us but it was still good. Stir in the basil and oil before drizzling over the meatballs and spaghetti.

The recipe we were using suggested we use dried onion, dried breadcrumbs and Parmesan cheese but never being one to follow the rules we did it our own way. We popped about half a slice of bread in the blender for our breadcrumbs and just used freshly chopped onions. Also we only used dried basil! We would have used Parmesan cheese but unfortunately we couldn't find any at the shops so we just used the Red Leicester that we had in the fridge. I suppose this just helped to make it our own recipe!

Even with our changes the meatballs were an absolute success and we'll definitely be making them again.

  3. Meatballs, oddly are one thing I never think about making even though we always have some mince around - i'll have to change that. Looks super yummy though!

  4. I do like a homemade meatball and I LOVE the idea of adding cheese to them. There's not much in the world that can't be improved by adding cheese.
